Roasted Red Pepper Tapenade with Roasted Onions & Garlic

The Superbowl is around the corner! Get out the chips, dips and fried wings!! NOT. The Superbowl every year is about tailgating and partying. Now, for most that does mean calorific fried food items and generally non-vegetarian dishes. But, it’s time to change that! Indulging once a year is okay, but taking in about a YEARS worth of calories in one afternoon is NOT okay. So, I’ve come up with some healthy, hearty and absolutely yummy superbowl party food options that’ll keep you coming back for more!

First up is my Roasted Red Pepper Tapenade with Roasted Onions, Garlic and Chilies. Its scrumptious, it’s zesty, it’s bold and best of all it’s VEGAN! Yes, an amazing Superbowl dip that’ll have meat-lovers and vegans rejoice! You won’t feel bad going in for seconds, or thirds.. or fourths. Filled with robust flavors of fresh roasted peppers and roasted garlic, blended with a bit of Tahini and lemon juice- it’s simple and filled with ingredients that households generally have! Eat it with pita chips, crackers, vegetables or top your favorite sandwich or falafel with it!

Roasted Red Pepper Tapenade:

  • 2 red peppers- diced into 1 inch chunks
  • 1 medium white onion- diced into chunks
  • 1 head of garlic– top trimmed off
  • 3-4 dried cayenne chilies
  • 1 tbsp Tahini
  • 2-3 tbsp lemon juice- preferably fresh
  • 2 tbsp extra virgin olive oil– more or less depending on consistency
  • warm water- couple tbsp
  • salt- to taste
  • coarse black pepper– few grinds
  • PAM Olive Oil Flavor
  • lemon rinds- for garnishing

1. On a baking sheet place a small piece of foil and place head of garlic. Spray with PAM and sprinkle with salt and pepper. Fold foil to create a packet. On the remaining portion of the sheet, add onions, peppers and chilies. Spray with PAM, sprinkle with salt and pepper and toss so each piece is coated. Place in oven on broil and cook for about 10-12 minutes, shaking the tray half way thru, so the vegetables cook evenly. Remove and cool before handling. Garlic should be soft and easily squeezable thru the skin.

2. Once the vegetables are cool, peel off an excessively charred parts and place into a food processor. Squeeze in all the garlic cloves, making sure not to get any of the skin in. Add roasted chilies, tahini, lemon juice, salt and pepper. Pulse until chunky-smooth. Blend on low and add a little warm water until its smoother. Blending a little faster, drizzle in olive oil until the dip comes together and is smoother, but not pureed. You want it to have texture. Taste for salt and lemon juice.

3. Place on a serving platter and top with lemon rinds and serve with pita chips, vegetables, crackers or with falafel!

Serves 6 (to make more, just double all the ingredients!)

Betty’s Simple Super Bowl Bean and Cheese Dip

In this video, Betty demonstrates how to make a Super Simple Bean and Cheese Dip. This dip is composed of refried beans, cheddar cheese soup, milk, and chopped green chiles. It is heated just to boiling, and then it’s ready to serve with chips!

Ingredients:

16-oz. can refried beans
10 ¾-oz. can condensed cheddar cheese soup
¼ cup milk
½ of a 4-oz. can chopped green chiles, undrained (You may use the full 4-oz. can, if you want the dip to be a little spicier!)
tortilla chips (I used Frito‘s Scoops)

In a medium-sized pot, combine a 16-oz. can of refried beans, a 10.75-oz. can of condensed cheddar cheese soup, ¼ cup milk, and 2 to 4 oz. chopped green chiles. Stir until combined. Heat slowly, stirring constantly, until smooth and bubbly. Transfer to a serving bowl, and serve with tortilla chips. This is a nice dip to put in a crock pot and keep warm during a party. (You may want to double the recipe if you’re taking it to a get-together. It’s great for holiday parties or sports games or just when you’re lounging on the sofa and feel like a spicy snack. Betty’s Chicken Chutney Cream Cheese Ball Recipe

In this video, Betty demonstrates how to make a Chicken Chutney Cheese Ball. This cheese ball is composed of cream cheese, cooked chicken, chopped pecans, mayonnaise, chutney, and curry powder. These flavors combine to make a luscious cheese ball that is a little out of the ordinary!

Ingredients:

8-oz. cream cheese
1 cup chopped cooked chicken
½ cup chopped pecans
¼ cup mayonnaise
2 tablespoons chutney
1 tablespoon curry powder

In a medium-sized mixing bowl, combine 8-oz. cream cheese, 1 cup chopped cooked chicken, ½ cup chopped pecans, ¼ cup mayonnaise, 2 tablespoons chutney, and 1 tablespoon curry powder. Stir well. Cover with plastic wrap and refrigerate for at least 30 minutes. Form into a ball and place on a serving dish. (You may roll in extra chopped pecans, if you choose.) Serve with assorted crackers. This is a wholesome appetizer/snack that I think you will enjoy. It is a great cheese ball to serve at a party, and with the Super Bowl and other sporting events coming up, a lot of you are looking for new snacks that are hearty and healthy. Betty’s Chocolate-Filled Meringue Sandwich Cookies Recipe

In this video, Betty demonstrates how to make Chocolate-Filled Meringue Sandwich Cookies. These cookies have creamy milk chocolate spread between two small, slow-baked, crisp meringue cookies.

Ingredients:

4-oz. milk chocolate chips (You may use any type of chocolate.)
3 egg whites
¼ teaspoon cream of tartar
1 ¼ teaspoons vanilla extract
1/8 teaspoon (dash) salt
½ cup sugar

In a large mixing bowl, place 3 egg whites, ¼ teaspoon cream of tartar, 1 ¼ teaspoons vanilla extract, and a dash of salt. Beat on high speed with an electric mixer until foamy. Gradually add sugar, continually beating until stiff peaks form and sugar is dissolved. Spoon the mixture into a zip-lock plastic bag. Snip one bottom corner of the bag to make a hole that is 1-inch across. Pipe mixture into 1 ¼-inch mounds onto a parchment paper-lined baking pan. Bake at 200 degrees (F) for 2 hours. Remove from oven and cool completely (about 30 minutes). When meringue mounds are cooled completely, place 4 ounces of milk chocolate chips in the top of a double boiler. Bring the water below to a boil and stir chocolate constantly until melted. Turn off heat. Spread a thin layer of melted milk chocolate onto half of the flat sides of the meringue mounds. Gently press flat sides of remaining half of meringue rounds onto chocolate-covered side of meringue mounds. Let stand until chocolate is set (about an hour). Place Chocolate-Filled Meringue Sandwich Cookies on a nice serving tray. These are a great treat for a party. With the Playoffs and Super Bowl games coming up, this is a sweet treat that you might like to serve. It is quick, easy, and impressive. It is wonderful for any get-together or just for a comfort snack at home. Enjoy!!! –Betty 

Betty’s Super Hot Wing Sauce Recipe

In this video, Betty demonstrates how to make a spicy Hot Wing Sauce to use with Hot Wings. You may also use this sauce for dipping French fries, mozzarella sticks, etc.

Ingredients:

1 stick butter (1/2 cup)
15-oz. can tomato sauce
2 oz. hot sauce
¼ teaspoon garlic powder
¼ teaspoon onion powder

In a deep pot, melt 1 stick butter. Add a 15-oz. can tomato sauce, 2 oz. hot sauce, ¼ teaspoon garlic powder, and ¼ teaspoon onion powder. Stir until well combined. Bring to a boil over medium heat. Reduce heat and simmer for at least 30 minutes. You may continue simmering, up to 1 hour for a more intense taste. This sauce is perfect with Super Bowl Boneless Hot Wings, which will be my next upload! Enjoy!!! –Betty 

Betty’s Boneless Hot Wings Recipe

In this video, Betty demonstrates how to make her fabulous Super Bowl Boneless Hot Wings. These are not made from chicken wings, but are made from chicken breast meat instead. This makes them easier and less messy to eat. You just dip them into Betty’s Super Bowl Hot Wing Sauce, and you have all the flavor of hot wings. (I also have Betty’s Hot Wings posted in bettyskitchen, if you prefer the chicken wing version.)

Ingredients:

3 pounds boneless, skinless, uncooked chicken breasts, with excess fat removed and cut into chunks about 1 ½ inches on each side.
freshly ground sea salt, to taste
freshly ground black peppercorns, to taste
2 eggs, well beaten
1 cup flour (all purpose or self-rising)
1 teaspoon salt
½ teaspoon paprika
½ teaspoon dried rosemary
peanut oil for frying

Place 3 pounds of uncooked, boneless, skinless chicken breast chunks in a large bowl. Grind fresh sea salt and fresh black peppercorns over the top, to taste. Use your hands to work the salt and pepper into the chicken chunks and set aside. (Wash hands before continuing.) In a small bowl, beat 2 eggs, until well-beaten and set aside. In a gallon-sized zip-lock bag, place 1 cup flour, 1 teaspoon salt, ½ teaspoon paprika, and ½ teaspoon dried rosemary. Bring the top of the bag together and shake well to distribute the spices throughout the flour and set aside. Place ½-inch of peanut oil in a cast iron or other heavy skillet. Heat over medium heat until a pinch of flour will sizzle in the oil. Now, moving quickly, place about 3 chunks of the salted and peppered chicken into the egg wash and drain for a second or so, then place them in the seasoned zip-lock bag of flour. Bring the top of the bag together and shake to distribute the seasoned flour over the chicken chunks. Shake off excess flour mixture and then carefully place chicken into the hot peanut oil. Continue placing coated chicken chunks into the hot oil, using this method, until you have a single layer. You will probably have to fry your chicken chunks in batches, and if you run out of the seasoned flour, just mix up another batch in a zip-lock bag. When the chicken turns a golden brown color on the bottom side, use tongs to turn each piece and brown the other side. When both sides are brown, the chicken will be done. Use tongs to remove each piece of chicken to a platter that is covered with paper toweling to drain. Continue coating and frying the chicken in this manner until all chicken pieces have been cooked and drained. With tongs, move all chicken pieces to a nice serving plate. Serve with Betty’s Super Bowl Hot Wing Sauce, along with celery sticks and Betty’s Best Blue Cheese Dressing. I hope you can use this recipe in your parties for sports events! –Love, Betty ♥♥♥♥♥
