Betty’s Strawberry Colada Punch Recipe

In this video, Betty demonstrates how to make Strawberry Colada Punch. This is a great drink for celebrating the New Year! You can make it with alcohol or choose the non-alcoholic version. If you are looking for a champagne drink, you will find one of those in bettyskitchen that uses pineapple sherbet, fresh strawberries, and champagne.

Ingredients:

15-oz. package frozen, sliced strawberries, partially thawed
13.5-oz. can coconut milk (You may use cream of coconut.)
3 cups pineapple juice, chilled
3 cups club soda, chilled
2 cups light rum (For a non-alcoholic version, replace the rum with 2 additional cups of club soda. In this video, I used 1 cup rum and 1 additional cup of club soda.)
crushed ice
sugar or sweetener to taste, optional (Note: I did not use sugar or sweetener in this video, but, if you like sweet drinks, you will probably want to add some sweetener.)

Place a 15-oz. package of partially-thawed, frozen, sliced strawberries into a blender. Add a 13.5-oz. can of coconut milk. Blend until smooth, stopping to scrape down sides, if needed. Pour into a punch bowl, or other large container. Add 3 cups pineapple juice, 3 cups club soda, and 2 cups light rum (You may substitute 2 additional cups club soda for the rum for a non-alcoholic version). Add sugar or sweetener to taste, if desired. Stir until blended. Ladle into glasses filled with crushed ice and serve immediately. Enjoy! –Betty 

Betty’s Italian Bread with Cheese Topping

In this video, Betty demonstrates how to make Italian Bread with Cheese Topping. The topping has a blend of two cheeses and some spices. This is a quick and easy way to perk up a loaf of Italian bread!


Ingredients:

½ cup mayonnaise
¼ cup Parmesan cheese, finely grated
1 clove garlic, finely minced
¼ cup Cheddar cheese, finely shredded
1 ½ teaspoons milk
¼ teaspoon paprika
16-oz. loaf Italian bread (I used Italian bread from the deli section of my grocery store.)

In a medium-sized mixing bowl, combine ½ cup mayonnaise, ¼ cup grated Parmesan cheese, and 1 clove minced garlic. Set aside. In a small saucepan, combine ¼ cup shredded Cheddar cheese, 1 ½ teaspoons milk, and ¼ teaspoon paprika. Cook over low heat, stirring constantly, until cheese melts. Remove from heat and stir in mayonnaise mixture. Slice a 16-oz. loaf of Italian bread in half lengthwise and place bread halves, cut side up, in a shallow baking pan. Broil about 6 inches from the broiler unit in oven about 1 or 2 minutes, until lightly toasted. Spread toasted bread evenly with cheese mixture. Broil about 6 inches from broiler unit in oven about 1 or 2 minutes, until cheese mixture is melted and is beginning to brown. Remove from oven and place bread halves on large serving platter. Cut into generous slices and serve. I serve this with pasta, and my family loves it! Enjoy!!! –Betty 

Betty’s Basic Garlic Bread Recipe

n this video, Betty demonstrates how to make Basic Garlic Bread. This recipe uses bread purchased from the deli section of the grocery store and includes very basic additions for a great accompaniment to pasta, steak, etc.

Ingredients:

½ loaf French or Italian bread, sliced horizontally (You may use home-baked bread or sliced buns or rolls—whatever you have on hand.)
3 tablespoons butter
2 medium cloves garlic, minced
¼ cup fresh chopped parsley (or less, to your taste)

Place ½ loaf French or Italian bread in a shallow baking pan, cut side up. In a small saucepan, melt 3 tablespoons butter over medium heat. Add 2 cloves minced garlic and sauté until tender. Remove from heat and stir in as much of the ¼ cup fresh chopped parsley as desired. Use a pastry brush (or spoon) to spread the garlic butter mixture evenly over the cut side of the half-loaf of bread. For soft garlic bread, place the prepared bread under the broiler unit for a minute or so, until it is brown on top and heated through. For crunchy garlic bread, place the prepared bread in a 350 degree (F) oven for 10 minutes. When the garlic bread is done, remove it from the oven and use a bread knife to cut it diagonally into serving pieces. Serve immediately, while hot! I know this is a very basic recipe, and that it is probably not needed, but you will see it when I upload the complete meal (hopefully on Friday), and I am just anticipating your questions. Betty’s Zesty Pepper-Jack Cornsticks

 

In this video, Betty demonstrates how to make Zesty Pepper-Jack Cornsticks. These are cornbread sticks that are made with Jack cheese that contains hot peppers.

Ingredients:

1 cup self-rising cornmeal mix
½ cup self-rising flour
1 egg
¾ cup milk
½ cup shredded pepper-jack cheese
peanut oil, for oiling cornstick pan

In a medium-sized mixing bowl, mix together 1 cup self-rising cornmeal mix, ½ cup self-rising flour, 1 egg, and ¾ cup milk. Mix until dry ingredients are just moistened, being sure that the egg gets completely incorporated into the mixture. Gently fold in ½ cup shredded Pepper-Jack cheese. Brush molds of cornstick pan with peanut oil, and heat the oiled pan in a 450 degree (F) oven. When the pan is hot (not smoking), spoon cornstick batter into into hot pan, filling molds almost to the top. Place back in a 450 degree (F) oven, and bake 6 minutes. Turn the oven to broil and brown off the tops of the cornsticks, about 2 or 3 minutes. Remove from the oven, and immediately transfer cornsticks from the pan to a nice serving dish. Serve Zesty Pepper-Jack Cornsticks immediately with butter! These are also great accompaniments to soups and stews. Enjoy!!! –Betty 
