Betty’s Ham and Cheese Party Sandwiches

Grilled Ham and Cheese Sandwich

Image via Wikipedia

In this video, Betty demonstrates how to make luscious Ham and Cheese Party Sandwiches. These sandwiches are made by placing some sliced ham and cheese inside party rolls, letting them soak a few minutes in a tasty sauce, and then baking them in the oven until they are golden, the ham is warm, and the cheese is melted.

Ingredients:

1 package baked dinner rolls (rectangular shaped in foil pan—24 per package)
½ pound thin-sliced cooked ham (You may use any cooked ham that you have on hand.)
prepared mustard for spreading on sandwiches
½ of a 6-oz. package of Swiss cheese slices
½ stick butter
½ teaspoon Worcestershire sauce
½ teaspoon poppy seeds
½ teaspoon prepared mustard

Stand dinner rolls vertically and slice in half with a knife, so that there is a layer of roll “tops” and a layer of roll “bottoms.” Place the layer of “tops” over the layer of “bottoms” in a baking pan. With your hands or a knife, separate rolls into individual rolls, each now having a “top” and a “bottom.” Cut the ½ pound of ham and the 3-oz. Swiss cheese into rectangles that are the size and shape of the baked rolls. For a package of 24 rolls, you will need 72 rectangles of ham (if the ham is thin-sliced) and 24 rectangles of cheese. Open up each roll and place 3 rectangles of ham and 1 rectangle of Swiss cheese inside and spread with a small amount of prepared mustard. When all rolls are filled, push them tightly together with your hands, so they have the appearance of the original pan of rolls. Now, make your sauce. In a small saucepan, melt ½ stick butter. Add ½ teaspoon Worcestershire sauce, ½ teaspoon poppy seeds, and ½ teaspoon prepared mustard. Stir until well-blended. Pour the poppy seed mixture over the 24 ham and cheese-filled rolls in the baking pan. Try to get each one covered. You may need a pastry brush to distribute the poppy seeds evenly. Let sit for 20 to 30 minutes. Bake at 325 (F) for 15 to 20 minutes. Remove from oven and place on a nice serving platter. Serve warm as finger food. This is a delicious treat and is particularly great for parties and potluck dinners! I hope you can use it for your New Year’s Eve get-togethers! –Betty 

Betty’s Jazzed-Up Grilled Pimiento Cheese Sandwiches Recipe

A wedge of Unpasteurised West Country Cheddar ...

Image via Wikipedia

In this video, Betty demonstrates how to make Jazzed-Up Grilled Pimiento Cheese Sandwiches. The filling is sharp Cheddar cheese, blended with mayonnaise, sour cream, pimientos, green onions and a touch of ground red pepper. It is spread on hearty white bread, topped with tomato slices, and then grilled in butter for a gorgeous and delicious sandwich.

Ingredients (for 2 sandwiches; you may have some filling left over):

2-oz. jar diced pimiento, drained
¼ cup mayonnaise
¼ cup sour cream
green tops of 1 green onion, finely chopped
1/8 teaspoon ground red pepper, or less, to taste
8-oz. extra sharp white cheddar cheese, shredded
4 white or wheat bread slices
1 medium tomato, thinly sliced
2 tablespoons butter, softened

In a large bowl, stir together 2-oz. diced pimientos, ¼ cup mayonnaise, ¼ cup sour cream, finely chopped tops of 1 green onion, and 1/8 teaspooon (or less) ground red pepper. Stir in 8-oz. shredded extra sharp white cheddar cheese. Spread one side of each of two bread slices with softened butter, and place them, buttered side down, in a large skillet or on a griddle. Spread about 1/3 cup of pimiento cheese mixture on top of each slice of bread. Place 2 thin slices of tomato on top of the pimiento cheese, and cap each sandwich with another slice of bread. Butter the top of the bread with softened butter. Place the skillet over medium heat, and then reduce to low, grilling the sandwiches slowly to allow flavors to mingle and cheese to melt. When brown on the bottom side, turn the two sandwiches over and brown the other side. When both sides are brown, remove from skillet and immediately place on a serving plate. I served mine with Kentucky “Caviar” and Raspberry Tea, both of which you will find in bettyskitchen. I hope you enjoy the sandwiches! –Betty 

BBQ Pit Boys Classic Sub Sandwich Recipe

The origin of this classic American sandwich is uncertain, but legend has it that it comes from the 1930′s Conti’s Grocery out of Patterson, N.J. It’s name, “Submarine”, is said to come from the Groton, Connecticut U.S. Navy Submarine Base. During World War 2, this huge sandwich was fed to returning sailors and solders, not only because it was quick to prepare but it was inexpensive to make!

This classic Sub is prepared with 12 inch Italian bread, and stuffed with cold cuts including salami, prosciutto (dry cured ham), capicola (dry cured pork shoulder) imported ham (cured ham), provolone cheese, roasted peppers, lettuce, tomatoes, onions, oil and vinegar, and then often oven toasted!

Watch one of the BBQ Pit Boys show you how easy it is to make one of these classic sandwiches, (that also goes by the name in some parts of the USA -Grinder, Hero, Hoagie, Cosmo, Po’Boy, Spuckie, Wedge, Zep, and Italian) using the BBQ grill, old fashioned brick oven style!
